Ideally you want to use fresh morels all the same size for this dish. It is possible to use dried morels, but fresh give the best results. The French like to stuff them with foie gras, but I think this is too rich. If you are vegetarian you can omit the sweetbreads - the result will be just as delicious. Serve as a starter on or with bread, or as a main course with boiled rice.
