In Italy almost everyone pickles some mushrooms to be eaten as antipasto, possibly with some slices of salami or Parma ham, during the Christmas festivities. The mushroom most frequently used is the cep or porcino but the St George’s mushroom, with its solid and thick flesh, is also excellent.
