This paste is easy to prepare and highly versatile. Not only can you spread it on little crostini, but it is also essential as an addition to sauces, soups or some pasta dishes. Use salted capers, as they are much richer in flavour.

It is better to blanch the almonds in hot water for a few minutes and then peel them, as this makes it much easier to then reduce them to a pulp.
