The Spaniards are so keen on this dish that they actually make ‘false’ elvers. These are made from a paste of minced-up fish, which is sculpted to the shape of an elver, with two black eyes and a silver line down the side!

Ingredients

  • 250 g (9 oz) elvers, cleaned
  • 12 tbsp extra virgin olive oil

Method

Preheat the oven to 200°C/400°F/Gas 6.

Divide all the ingredients between 4 ovenproof ramekin dishes and bake in the preheated oven for 5 minutes
