Ingredients

  • 32 fresh live crayfish
  • 1.5 litres ( pints) lager

Method

Bring the lager to the boil with the dill, sugar, salt and pepper. Add the crayfish and then place the lid on the pan. Cook for 10 minutes, after which the fish should be a beautiful red colour.

Serve on hot plates accompanied by a little of the cooking liquid and, if you want to be really Swedish, with bread and butter, some cheese, and some Schnapps. Skål!
