One of the most satisfactory of Italian dishes to produce is ravioli. You can use all sorts of leftovers, such as meat from roasts, stews etc. to make the filling. Here I have used a few nice prawns. To improve the taste of the sauce, cook the shells and heads in a little water. Strain and press out the juices then boil the liquid to reduce. Add to the saffron butter.
