This is probably one of the most classic and best loved of all Italian dishes during the hunting season. As hare is extremely difficult to shoot, I would suggest that you try to obtain one from your butcher or game dealer. A real gourmet dish, it is made even richer in some parts of Italy by the addition of a few slices of white Alba truffle. A good bottle of Barolo or Barbaresco, or even an old Chianti, would accompany this very well indeed.
