“While I was visiting a wine company in Veneto, I ate in a small unknown restaurant or osteria. Some beans came to the table cooked as a side dish. They didn’t look special but their flavour was unbelievable. I asked for the recipe and the answer was cotti con il Pinot cooked with Pinot wine from the latest harvest.”
Discard the soaking water and boil the beans in fresh water with the bay leaves for at least 2 hours, or until soft. In another pan, melt the butter and fry the speck until brown, then add the drained beans and stir for a few minutes. Add the wine and let it evaporate. Adjust with salt and pepper to taste.
