Put the olive oil in a pan and fry the pancetta with the onions. Let the onions become soft, about 5 minutes, and then add the broad beans and the water (add more if required). Cook for 25 minutes, then add the mint and the sausage cubes. Cook for a further 10 minutes, then add salt and pepper to taste.
Serve as a first course.
