I like to think of this as a quick fix dish. It blends the protein and vegetable combination in the best possible way. It is a comfort food that the family will enjoy any time of the day or night. Traditionally papayta per edu is served with a spicy carrot and dry fruit pickle (Gajar mewa nu achar) and fresh rotli or crisp bread.
In a large skillet heat the oil; add and cook the onions to a light golden colour.
Add the potatoes, green chillies and sprinkle with salt.
Keep the flame on a low heat. Cover the pan and cook through, until the potatoes are soft.
Add the eggs, cover and cook for 5 minutes or to your liking.
