Crabs are found on the very bed of the sea, sunk deep down in the mud. They can be very small like the soft shell crabs or fairly large like the Dungeness Crabs; found in the waters off Coastal British Columbia. The other common variety is the Mud crab. Singapore is world famous for the Chili Crab prepared with these.

The Crabs must be very fresh when you buy them. They are generally sold ‘alive’ and cleaned on the spot for you. Wash them well with water and drain before you marinat
