This vegetable Palau is a perfect accompaniment to the Chicken Curry. And yet, it has so many wonderful flavours of its own making it a ‘dish’ often served by itself with just a simple raita or the dhansak ni dar (without meat).

Ingredients

  • 3 tbsp oil
  • 2 medium onions finely chopped
  • 1 tsp crushed

Method

In a pot (preferably oven proof), heat the oil and fry the onions until golden brown. Add the garlic, salt and all the dry ground spices; cumin, cardamom, cinnamon, cloves, and turmeric powders. Sautee and stir this for a minute. Then add in the chopped vegetables and sauté for 3 minutes.
