Kumas is a Parsi cake that has Persian roots. Made up of semolina, saffron and almonds it gets its moistness from yogurt. It is dense and simply delicious. Flavoured with cardamom and nutmeg and made with a combination of whole and wheat flours gives the Kumas its uniqueness.

This is my mum’s version, highly perfected. I proudly share it today with all of you since I have yet to eat a better Kumas anywhere in the world. She has been requested to bake this for weddings, baby showers,
