Method

These should be cut not quite so thick as mutton, and the skin left on. They will take one third longer to do. Well rubbed with pepper and salt, and an onion, previous to broiling, is an improvement.

These can be served with any sauce, as apple, tomata, horseradish, mustard, sage and onion, &c. &c.
