Pavlova, Australia’s national dessert, is essentially a meringue cup filled with ice cream and whipped cream. Passion fruit is often the flavor of choice and I’ve chosen to stick with that tasty tradition here.

Ingredients

Passion Fruit Sorbet

  • ¾ cup granulated sugar
  • 3 cups passion fruit purée

Method

  1. To make the sorbet: Put the granulated sugar in a medium saucepan with 1 cup water. Bring the mixture to a boil, stirring occasionally. Remove from the heat and stir in the passion fruit purée. Transfer to a mixing bowl and cool in the refrigerator (or over a bowl of ice,
