A light body and full flavor are the hallmarks of many Asian soups; it is important to start with a stock that is clear and extremely tasty. Tofu and clever use of chicken and asparagus add substance and drama to this stunning soup.

Ingredients

  • 5 oz (150 g) ground chicken
  • 2 tablespoons minced watercress

Method

  1. Combine the chicken, watercress and coriander leaves in a bowl. Add the garlic, potato flour or cornstarch, soy sauce, pepper and salt, and mix well.
  2. Wet your hands, scoop 1 tablespoon of the chicken mixture and wrap it around the base of an asparagus spear. Repeat until the chicken mixture is used up.
