Focaccia is a flatbread, originally from the Liguria region of north western Italy, which has now become popular all over the world. This version adds the wonderful fragrance of Thai basil.


Pre-ferment Dough

  • 1/8 teaspoon instant yeast granules
  • 1 cup (250 ml) warm wa


  1. Make the Pre-ferment Dough by whisking the yeast granules with the warm water in a bowl until it dissolves. Fold in the flour until well combined. Cover the bowl with a cloth and set aside for 1 hour, leaving the Pre-ferment Dough to double in volume.
