A paste made from fermented soybeans and various grains, Japanese miso comes in many varieties ranging from salty to sweet. Slightly sweet white miso is called for here but any other type may also be used. Delicate fillets of cod or seabass make an ideal accompaniment to the suave, complex flavors of miso, which is used here to make a delicious marinade.
