Brief poaching in a light chili-ginger syrup accentuates the fruity tartness of green mangoes. These are generally used shredded, in salads, so their presentation here in larger pieces, threaded on skewers with neat pieces of octopus, is an original, and stylish, departure.

Ingredients

  • 6 cups (1.5 liters) water
  • Juice of 1 lemon

Method

  1. Bring the water to a boil in a pot and add the lemon juice and thyme sprigs. Place the octopus in the boiling water and simmer for 1 hour. Drain the octopus and plunge into the ice water to cool. Slice the octopus into bite-sized cubes and set aside.
