Mediterranean touches—sundried tomatoes, black olives and olive oil—blend surprisingly well with mild tofu, black Chinese mushrooms, Chinese fungus and rice vermicelli. Any mushroom actually works well here (chanterelles or morels, for example). The striking presentation makes these rolls ideal to serve as a shared appetizer or as an accompaniment to pre-dinner drinks.
