Otah-otah is a fragrant seafood delicacy from the culinary repertoire of the Straits or Nonya Chinese of Malaysia and Singapore. Long coconut palm leaves are filled with a fragrant spice paste and chunks of fish or shrimp, then roasted over an open flame. Palm leaves are the traditional wrapping but paper bark makes an interesting alternative; if neither is available, simply bake the mixture in lightly greased muffin pans and slice into serving portions.
