Kadaifa pastry is a unique, Middle-Eastern ingredient made up of fine dough strands that are cooked to form crunchy, golden threads. Here they form “nests” for a delicious shrimp and lobster or scallop fillings; the contrasting textures, and lovely presentation, make this a very special dish.

Ingredients

  • Oil, for deep-frying
  • Mint leaves, to garnish
  • Sweet black soy sauce, for dipping (optional)

Method

  1. First make the Yuzu Soy Dip by combining all the ingredients in a bowl and mixing well. Set aside.
  2. Make the Lobster Nests by poaching the lobster until pink, about 3 minutes. Remove and set aside. When cool, shell the lobster and cut into 8 long pieces. If using crayfish, poach and shell. Season the shrimp paste with the salt and pepper in a bowl, and mix well.
