The essence of this dish lies in the use of mild Northern Indian spices and paneer, the fresh, creamy cheese so common in that region. With their crisp coating and soft, comforting fillings, tikkis make a superb casual appetizer or an inspired addition to an Indian-style buffet.

  1. Combine the yogurt and cream cheese or paneer in a bowl and mix well with the onion, chilies, ginger, coriander leaves and salt. Chill in the refrigerator for 10 minutes to harden slightly.
