This witty creation relies on two, easy-to-make biscuit mixtures, some lovely citrus flavors and just a beginners’ skill with an icing bag, for full impact. Drawing the circle outlines on the greaseproof paper first will help in the forming of accurate circles.

Ingredients

  • Greaseproof baking paper
  • 12 bamboo skewers

Method

  1. Make the Fruit Filling by sifting the flour and salt together and set aside. Heat the juice in a saucepan over low heat until warm. Set aside. Whisk the butter and sugar in a bowl until light and fluffy, then fold in a little warm juice followed by a tablespoon of the salted flour, and mix well. Continue to add in this manner until all the juice and flour are incorporate
