Lao-Style Dipping Sauce

Jeow som is our favorite sauce, and it is a runaway favorite at Curry Boys BBQ when we serve it with our pork ribs. Andrew Ho will use this with absolutely everything (I’ve even seen him dip plain ol’ tortillas in the sauce as a snack). It goes particularly well with smoked or grilled proteins—particularly with beef or pork. A little goes a long way, and you can certainly adjust the spice level in this sauce to yo
