Galeto ao primo canto is a typical chicken dish from the south of Brazil, especially Rio Grande do Sul. It is made with galeto, a young chicken that is harvested at around three weeks old (hence the name “chicken at first song”) and usually roasted over coals.
Here in the United States, the closest you will find to a galeto are the young (fryer/broiler) chickens. They are a little older and bigger, but I like them because I can feed four people with just one chicken! If you prefer,
