If you’re not familiar with pamonha, it is a sweet or savory corn paste that is assembled and boiled in corn husks, similar to Mexican tamales. Popular all over the country, we have whole establishments dedicated just to serving pamonha, usually located roadside to attract those who are driving by.

After many failed attempts at making traditional pamonha in the U.S., I finally admitted defeat. American corn is different than Brazilian, and I couldn’t get it to thicken when boiled. T
