Quibebe is a Brazilian side dish with African and indigenous origins consisting of mashed squash (in this case, butternut) seasoned with aromatics. It is a great accompaniment to chicken, beef, pork or even fish. This recipe can be made with butternut squash (abóbora de pescoço) or kabocha (abóbora Japonesa).
Place the squash in a large pot with a pinch of salt and cover with water. Bring it to a boil over medium-high heat, and cook for 5 to 6 minutes, or until tender. Drain, and then smash with a fork or potato masher. Reserve.
