Soothing and reassuringly simple to make, plain cauliflower cheese is comfort food at its best, but there are also lots of possibilities for jazzing it up. The leeks here can be replaced by practically any greens you have in your veg box –other variations.

Ingredients

  • 1 large cauliflower, cut into large florets
  • 6 rashers of streaky bacon, diced
  • 2 leeks, trimmed and cut into 1cm slices

Method

Heat the oven to 200°C/Gas 6.

Boil or steam the cauliflower for about 4 minutes, leaving it with a good bite.

Fry the bacon in its own fat until just turning crispy. Blanch the leeks in boiling salted water for 4–5 minutes, until jus
