Spaghetti squash generally has a fairly mild flavour but is fun to cook and shred into noodle-like strands. You could omit the pasta from this recipe and serve it as a side with some grated Parmesan.

Ingredients

  • 1 spaghetti squash
  • sunflower or light olive oil, for roasting and frying
  • 50 g pine nuts

Method

Heat your oven to 220°C/Gas 7. Cut the spaghetti squash in half lengthways. Lay the two long halves cut-side up on a baking tray, drizzle with oil and season with salt and pepper. Roast in the oven for
