Crown prince has a rich orange flesh that holds its shape beautifully when cooked, giving a good texture to the filling. This pie goes well with a simply dressed salad of bitter leaves and toasted hazelnuts or late-season cobnuts, or a pile of warm kale seasoned with fried garlic on a colder day.

Ingredients

  • 1 medium crown prince squash, peeled and cut into chunks
  • light olive oil, for roasting and frying
  • 2 red onions, thinly sliced

Method

Heat the oven to 200°C/Gas 6 then roast the squash with a good drizzle of oil and salt.
