A rich, flavoursome stew that is easy to make and can be made ahead of time. Once you’ve browned the shin meat and made the onion base, you simply leave this slow-cooking cut on a low simmer to work its magic. This is a wonderful dinner on a cold day, paired with warm butter beans. Or eat it in the warmer months with boiled new potatoes.
