The French have many variations on their classic hollandaise; in a sauce maltaise it is flavoured with blood orange. It’s distinctively tangy and sweet. A regular orange gives different but also delicious results. Once made, the sauce will only hold for about 5 minutes before it is liable to split, so make sure your broccoli is prepped and ready to be cooked and served immediately.
