This side dish is called sigeumchi namul and is usually eaten with other vegetable dishes and rice. You can use either sort of spinach for this, though we’d recommend true if you have it. It is best dressed just before serving.

Ingredients

  • 200–250 g spinach
  • 2 small garlic cloves, finely chopped
  • 1 spring onion, finely sl

Method

Trim the spinach stems if they’re large, and wash thoroughly. Blanch and squeeze the spinach then roughly chop.

Put the garlic, spring onion, soy sauce and sesame oil in a large bowl and mix well. Add the spinach and mix again, using your hands to make sure each leaf is coated. Taste and adjust the salt. Serve at room temperature topped with the sesame
