Traditional amaretti biscuits are wrapped, two at a time, in colourful papers. You can do the same for presentation or gifting, and they can be used to crumble over ice cream, or even stirred into yogurt.

Ingredients

  • 2 egg whites, at room temperature
  • cup (80 mL) sugar

Method

  1. Preheat the oven to 300°F (150°C) and line 3 baking trays with parchment paper.
  2. Whip the egg whites at high speed until foamy, then slowly pour in the sugar while whipping, continuing to whip until the whites hold a medium peak.
