A fruitcake should be about just that: the fruit! Soaking the fruit in orange juice keeps the fruitcake moist and sweet, and eliminates the need for spirits.

Method

  1. Preheat the oven to 350°F (175°C) and grease a 9- × 5-inch (2 L) loaf pan.
  2. Bring the water and orange juice up to a boil, pour over the raisins, citrus peel, and dried cherries, and stir. Cool the mixture to room temperature, stirring occasionally.
