This tangy Russian salad makes a very colorful presentation. For a more substantial plate, serve with Smoked Trout Pâté on croutons if desired.

Ingredients

Horseradish Vinaigrette

  • ½ cup sliced peeled fresh horseradish
  • ¼ cup white vinegar
  • ½

Method

Procedure

For the horseradish vinaigrette, purée the horseradish with the vinegar in a food processor or blender. Transfer to a bowl and whisk in the remaining ingredients.

To serve, toss the carrots, apples, cabbage, and walnuts with enough vinaigrette to coat.
