This classic Roman soup originally was prepared with broccoli romanesco, an antique varietal that has recently been cultivated in America and is starting to find its way into our markets. Romanesco broccoli is pale green and each head looks like a bouquet of miniature Turkish minarets. If you can’t get the antique, the modern dark green version will still give you happy results.
