I came up with this recipe last July Fourth. I wanted a sauce that was all-American; just why the martini came to mind I don’t know. But the combination of juniper and olives is a natural for fish. The compound butter can be prepared well ahead. Try it on grilled swordfish or tuna.

Ingredients

  • ½ pound unsalted butter, softened
  • ¼ cup Seasoned Gin

Method

Procedure

Combine all the ingredients and salt and pepper to taste in the container of a food processor and process to blend. This butter may be well wrapped and frozen in a log shape and then sliced as needed. Use about 2 tablespoons for a 6- to 8
