I like this as an accompaniment for roast duck with a citrus glaze or with roast turkey or pork loin. It can be assembled ahead and refrigerated, loosely covered with a foil tent. If you don’t want to serve this in a roll, you can put layers of filo in a baking dish or deep pie pan, add the potatoes, then top with more filo and bake. In Greece they do a variation of this filo pie with butternut squash, and sprinkle a little cinnamon sugar in between the fi
