Just about every part of the world has its own version of a sausage sandwich. Choripán is South America’s spin. It’s traditional street food that originated in Argentina, spreading throughout Chile, Peru, Bolivia, and beyond. The classic version is made with chorizo, but I wanted to change it up a little to put my own stamp on the classic. I make mine with andouille sausage because it has a deep rich flavor few sausages can match. I serve it up with a nod to my mom and her Cajun styl
