We first began supplying the Caledonian Sleeper with breakfast bakes in 2017 and this muffin was our favourite. The recipe has been tweaked over the years; it’s not too sweet, lovely on its own, but also great cut down the middle and spread with butter and jam.

Great recipe with really good flavour! I had trouble getting rid of lumps of brown sugar so I found it more effective to combine the sugar with the melted butter first before mixing with the rest of the ingredients.
