This loaf is a favourite at Christmas time; packed with flavour, it looks lovely just as it is and doesn’t need any decorating to look festive. It’s also really easy, which makes it the perfect festive bake. It’s not just for Christmas though: you can use raspberries instead of fresh cranberries to make it the rest of the year.

Ingredients

  • 2 lb (23 x 13 x 7 cm) loaf tin, lined
  • 240 g self-raising flour

Method

Preheat the oven to 180°C (160°C fan).

Weigh the flour and sugar into your mixing bowl and add a pinch of salt. Give it a little mix to combine.
