This recipe came about because we had some Meringue Frosting to use up and it’s become a firm favourite. The cup part is a cross between a sponge cake and a brownie and it’s super simple to make. If you don’t have a thermometer to make Meringue Frosting, you can use giant marshmallows instead.

Ingredients

  • 12-hole muffin tin with 10 of the holes really well greased with butter and dusted with cocoa
  • 175 g good quality 70% dark chocolate, chips or chopped

Method

Preheat the oven to 180°C (160°C fan).

Weigh your chocolate and butter into a large heatproof bowl and melt really slowly over a pan of just-simmering water. We weigh ours directly into our stainless steel stand mixer bowl. Leave to cool.
