Ingredients: 200 g chopped dried dates; 6 medium eggs; 32 x 21 cm traybake tin, lined; 1 tsp baking powder; 24 pecan nuts, roasted; 300 g soft dark brown sugar; 300 g self-raising flour; 200 ml hot, strong Earl Grey tea made with one teabag; 250 g unsalted butter, softened; 100 g pecan nuts, roasted and finely chopped; 1 batch of Brown Sugar Glaze

Imagine a cross between a sticky toffee pudding and a sponge cake. This is it! It’s lighter than a traditional sticky toffee pudding, but it still has all the flavour and it makes a lovely autumn pudding served warm, straight out of the oven, and topped with Brown Sugar Glaze. It’s equally lovely served at room temperature, like we do in the bakery.
