The combination of dark chocolate and raspberries is always a winner. In this loaf we put puréed raspberries in the chocolate cake and add pops of flavour from some freeze-dried raspberries on top. It bakes beautifully with a very satisfying crack across the top. The result is a lovely, impressive cake, perfect when you want something smaller than a layer cake for a celebration.
