Rachel, our bakery manager, came up with the idea of a millionaire with a gingerbread shortbread base when we were looking for seasonal ideas for the menu. Since gingerbread lattes are a huge seller, we added a coffee and stem ginger caramel as well, and after a few tweaks the Gingerbread Latte Millionaire was born!

Ingredients

  • 32 x 21 cm traybake tray, lined

Method

Preheat the oven to 180°C (160°C).

First make the base. Weigh the butter, caster and icing sugars and vanilla into a large bowl and beat (on low if you’re using a mixer) until everything comes together and looks lighter in colour.
