This recipe was a bit of a happy accident. I wanted to come up with a luscious, deeply chocolatey plant-based cupcake that would work well for a celebration. I love baking blogs and had seen a lot of American recipes that use mayonnaise in their chocolate cakes — not as surprising as it first sounds given that mayo is just oil and eggs. Granted, these recipes weren’t vegan, but we use a lot of vegan mayo in our savoury kitchen so I thought I’d give it a try here. We’re delighted with how it turned out and hope you like it too.
