Ingredients: 375 g unsalted butter, softened; 375 g caster sugar; zest of 2 lemons; 2 tsp vanilla extract; 3 x 20 cm sandwich tins, greased, then lined on the bottom only; 50 g (approx.) fresh blueberries; 6 tbsp Lemon Curd; lemon zest; few drops of lemon curd; 1 naked cake batch of Basic Buttercream; 100 g (approx.) fresh blueberries; 1-2 tbsp elderflower cordial; zest of 1 lemon; 375 g gluten-free self-raising flour; 6 medium eggs; 2 tbsp elderflower cordial; 1 tsp xanthan gum

This started its life as a Blueberry & White Chocolate Cake, until bakery manager Rachel added a bit of home-made elderflower cordial. It’s another pretty, natural cake, with light, zingy flavours; perfect for a summer birthday or party.

Method

Preheat your oven to 180°C (160°C fan).

Weigh the butter and caster sugar into a big mixing bowl or stand mixer and add the lemon zest and vanilla extract. Crack the eggs into a jug and weigh the flour into another bowl.
