This cake is a beautiful showstopper. Layers of brown sugar lime sponge filled with buttercream, lime curd and biscuit chunks, and covered in toasted meringue. We’re not going to lie; it’s a lot of work, but none of the stages are difficult and you can make it over a couple of days. The results are worth it! Shop-bought biscuits and curd work really well here, so there’s no need to make your own.
